Recipe Review - Ritz Chicken

I really enjoy cooking, but I am not great at trying new recipes.  I am trying to get better at that.  When I do find a recipe that I like, I LOVE LOVE LOVE sharing it with people.  So, now that Miss C is here and I have the energy to cook again (and the room in my stomach to eat what I cook), I have decided to start trying those recipes that I have been pinning on Pinterest for so long.

Tonight we had Ritz Chicken.

My mother taught me that I should follow the recipe precisely the first time I make something.  If you don't follow the recipe, then you won't know if you actually like the dish or if you just didn't like the adjustments you made.  Generally, I follow her rule...but I didn't with this one.

Ritz Chicken

Ingredients:
1 lb chicken tenderloins, cooked and cubed
1 1/2 cups Minute Rice, cooked
1/2 cup sour cream
1 can cream of celery soup
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
1 teaspoon minced garlic
1 tablespoon lemon juice
1/4 teaspoon red pepper
1 cup crushed Ritz crackers
1 packet Shake 'n' Bake Crunchy Pretzel
1/2 cup melted butter

Directions:
1.  Preheat oven to 350 degrees
2.  Combine sour cream, cream of celery soup, Worcestershire sauce, celery salt, garlic, and lemon juice.
3.  Add cooked chicken and rice to the sauce mixture.  Stir well.
4.  Pour chicken and rice mixture into a 9x9 baking dish.
5.  In a separate bowl, stir together crushed Ritz crackers, Shake n Bake Crunchy Pretzel packet, and melted butter.  Sprinkle over chicken and rice mixture.
6.  Bake for 30 minutes or until the top of the casserole is browned and the sauce is bubbly.



We really enjoyed this meal!  I paired it with some Sweet Green Beans.  I wish I would have had broccoli to make Roasted Broccoli...but I didn't.  This was easy to throw together because I cooked my chicken earlier in the week when I was meal planning.  This recipe is definitely a keeper!

  1. My Grandmother has a recipe for just fake frying chicken with Ritz crackers. I LOVE it, it's a stand by in this house.
